With the latest version of the software (Updated August 2014), you are no longer able to run a sale if the phone doesn't have access and force it later. This was done because so many businesses were doing trade shows without connectivity and then finding out they were swiping stolen cards when they went to run it and were out the money. So as a safety measure, they removed this functionality.
Can I accept American Express?
Yes. But you need to call in first to get it added. This can take a few days to get set up.
